A tasty little hot evening meal, warm or cold salad for any day of the week. Easy to make, simply delicious on the toungue.
Spaghetti, Chopped Chicken and cold salsa.
Spaghetti – cook as instructed on packed.
Chicken, previously roasted, chopped breasts (I ate the skin separately as hate it in salad and who’d let the skin go to waste?!)
I enjoy making a container full of salsa at a time so it’s always ready to use for easy fill-up meals like this one.
Finely Chopped/ Crushed Garlic & Ginger
Herbs : Thyme, Oregano, Basil, Coriander – fresh if you have
Tomatoes, Onion – red, Chilli, Peppers
For a cooked Salsa you can heat a table spoon of olive oil, place the Garlic, Ginger, Onion, Chilli, Salt, Pepper into the pan, heat through, add the rest of the ingredients until cooked through or to your liking. Chill before placing into the fridge, closed.
Salsa’s are fantastic for adding to any meal and with the above ingredients as a base, you can add anything you like such as Anchovies, Pineapple, Apples, Grated Carrot, Beetroot… the sky is the limit. And use, of course an an accompaniment, on a cracker with cheese, on grilled aubergine or in a tortilla!
