Warm Spaghetti Salad with Chilli Salsa

So I’ve not had starch much since coinciding my diet with Jess’ and today being day 3 of up at 5 a.m., Yoga and stretching I was feeling more peckish  than usual.

I decided on Spaghetti with a light Oil & Vinegar Dressing/Salsa for late Lunch.

Boiled spaghetti with a little basil and salt.

In the warm  empty pot ( whilst straining the spaghetti) I added:

  • Coconut Oil – half tablespoon
  • Apple cider vinegar – splash
  • finely chopped garlic, red onion, yellow pepper
  • finely chopped parsley and celery
  • quartered cherry tomatoes – handful
  • squeeze of lemon juice
  • herbs incl sumac
  • dash of honey

I literally sweated this out in the warm pot for about three minutes then tossed the spaghetti back in. Stirring on low heat for about three minutes should give a lovely warmed, tossed feeling to the tomatoes which attaches itself beautifully to spaghetti.

Made for a delicious late afternoon snack although it did feel like midnight by 4pm!
