Grilled Aubergine & Fried Egg

We grill our Aubergine with a spicy little coconut oil marinade with chilli, garlic, peppers and more… this time we went a little wild..

And topped that with an Egg fried in coconut oil (or butter if you’re into Banting) with a tomato salsa to add life to the party. It truly was quite scrumptious and worked really well as a change up from the normal bacon and eggs.. not that there is a substitute for bacon…

Chilli & Coconut Oil Marinade / Dressing:

Chopped very finely:

  • Chilli (to taste – I usually use a whole small chilli or dried flakes)
  • Pepper – red/yellow/green or a combo
  • Dash of Apple Cider Vinegar
  • Dollop of Honey
  • Herbs: Oregano, Thyme, Basil, Dhania
  • Parsley

Whisk together with a hand whisk.

IMG_20160205_191048Aubergine sliced into discs as thick as you want them, thick enough to remain in one piece. Smother the slices with the marinade. Pop into the fridge or rest in the oven if you have time. If not, place under the grill on around 150-180 just above the center of the oven. i.e. not directly below grill. We like ours cooked fairly slowly so it’s soft in the center then raise to the top for a quick light crisping of the outside.

Eggs: Fried in a Non-stick pan with coconut oil (or butter if you’re doing Banting)

Topping: Again we like to do a ‘whatever is in the fridge’ salsa style topping. This time, in a small pan we gently sweated finely chopped ingredients:

  • Red Onion
  • Celery
  • Parsley
  • Chilli
  • Red Pepper
  • 4 x Tomatoes: we used red and yellow (baby -quartered)
  • Dash of honey
  • Dash of Apple Cider Vinegar
  • Herbs: Oregano, Basil, Thyme and Sumac

Takes about 5 mins.

Two minutes before the end we tossed in the Oyster Mushrooms to raise the standards.

Assemble the Aubergine, Egg and Salsa and enjoy! This meal is an incredible meat alternative, tastes amazing and fills the gap leaving total satisfaction and salivating for more.
